Chunky Beef

Here is my version of beef stew. This is one of my wife's favourite dishes as it is so tasty with a little bit of sweetness.

I
ngredients:

  • 1kg Beef Brisket or any sort of stewing steak
  • 14 Cups water
  • 2 Brown Onions, sliced
  • 1 Cup Sugar
  • 1 Carrot
  • 10 Quail Eggs (tinned or fresh)
  • 1/2 Cup Korean Soy Sauce
  • Splash Soju
  • Pinch Pepper
  • 1 1/2 Tbsp minced garlic
  • 1 Tsp minced ginger
  • 1 Tbsp sugar syrup
  • 1/2 cup spring onion (scallions)
  • 1 Bundle of Bok Choy

What to do:

Trim the beef and cut into pieces approximately 3.5x3.5cm. Bring to the boil 4 cups of water in a pot and boil the beef for approximately 10 minutes. Discard the water and set aside the beef.

Boil 10 cups of water, then add the meat and simmer for a further 2 hours. Add the onion and sugar to the meat and continue to simmer.

After 2 hours the water should be substantially reduced.

Slice the carrot julienne-style and add to the meat with quail eggs, Korean soy sauce, soju, pepper, minced garlic, minced ginger and sugar syrup.

Wash and cut the spring onions and bok choy and when the carrot is tender it is time to add them too.

When the sauce looks shiny you are ready to eat this tasty dish.

Eat with a bowl of freshly cooked steamed rice and Kimchi
