Lotus Root

When I was growing up I thought only rich people at this dish. I was told that the long skinny lotus root was the male and the short chunky one was the female. When I buy a lotus root I always choose the 'female'

Ingredients:

  • 400g Fresh Lotus Root
  • 50ml Oil
  • 2 Cups Water
  • 3 Tbsp Soy Sauce (see below)
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Sesame Seeds

Soy Sauce

  • 2 Tbsp Korean Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin
  • 1/2 Tbsp Sugar Syrup

 

What to do:

Peel the lotus root and thinly slice.

Put the oil in a frypan and head to medium. Add the lotus pieces with the water and soy sauce ingredients.

Simmer until the sauce has reduced and the colour is a light to medium brown.

Turn off the head and then quickly mix in the sesame oil and sesame seeds.
