String Beans and Scallops

String Beans and Scallops

Fast, Simple and Tasty. Great for a snack or as a side.

Ingredients:

  • 8 String Beans
  • 1/2 Zucchini (courgette)
  • 1/2 Red Capsicum
  • 1 Tbsp Butter
  • 1/4 Cup Fried Onions
  • Salt & Pepper
  • 2 Tbsp Coconut Milk
  • 2 Tbsp Ginger-flavoured Sweet Soy Sauce (Recipe in Korean Cookbook by Chung Jae)
  • 8 Japanese Scallops
  • Oil for frying

Method:

Finely dice the string beans, zucchini and capsicum.

In a frypan on high head, add the butter, beans, zucchini and capsicum and fry until soft. Then add the friend onions, salt and pepper, coconut milk and sweet soy sauce.

Pan-fry the scallops with a pinch of salt and pepper on each side in a little oil until golden brown

To serve, place the bean mixture on top of each scallop and it is ready to eat.
